Apprenticeship Details

A great opportunity has arisen to learn all aspects of Professional Cooking at The Hostelrie in Goodrich.  The Hostelrie is a Room/Pub resturant newly taken on by Katherine & Daniel Balanovsky in the beautiful rual location of Goodrich in Ross-on-Wye.

We are an independent freehouse with new ownership since February 2021 this year, and wish to guild a business that is considered a top quality destination food venue with 8 boutique style rooms.

Our food style will be based on local, seasonal produce, and cooked to order. Chef Daniel has experience at 2AA Roseae standard and has worked under 2 Michelin Star Chefs. He is keen to pass on what he has learnt and is always experimenting with dishes and recipes. Front of House is run by Katherine, a Sommelier by training, who is looking to balance the friendliness of a local country pub welcome, with the professionalism of a well trained restaurant team.

Your training will invovle and not limited to:

• Learning to prepare, cook and present dishes to chefs’ specification.
• To learn and have a full understanding of hygiene and health and safety requirements to work
effectively in a professional kitchen environment.
• Washing up, cleaning and learning good management of the kitchen.
• To become an integral member of the kitchen team and to aid chef in all aspects including menu
invention, preparation and service.

Qualifications required: GCSE Maths and English grade 2 and above or Functional Skills level 1 and above.  If you do not have GCSE grade 4 or above or Funcational Skills Level 2 and above in either of these, then you will be entered in for a short training course including exam during your apprenticeship with us, this is a mandatory part of the apprenticeship training.

Qualification provided:  City and Guilds training as Production Chef Level 2. You will take a practical End Point Assessment exam at the end of your practical training. Once passed your will obtain your Producation Chef Level 2 Certificate from the Institute for Apprenticeships. More information about the qualification can be found on the link below.
