Apprenticeship Details

Established in 2019, Chapters is a modern British independent restaurant situated in Hay on Wye. We source the best produce from the local area, championing local suppliers for our customers and serve it in a relaxed atmosphere. We grow and forage a large amount of ingredients which is a great passion of ours. We run a 4-day working week, running dinner service only between 5 – 9pm offering a set menu of 6 – 7 courses. We change the menu regularly when the seasons allow using an even mix of classic and modern techniques. We are always progressing working on projects of fermenting, pickling, and inventing new ways to serve the food.

You will gain your working knowledge, skills and behaviours working with our Head Chef and you will learn how to do the following, as well as other duties.

Takes care of daily food preparation and duties assigned by the Head Chef who you will work directly with to meet the standard and the quality set by the restaurant.
Follow food hygiene procedures allocated to you by the Head Chef.
Prepare and plate dishes during evening service.
Work in efficient manner and regularly working to a deadline.

Potential for a full time Commis Chef role after finishing the apprenticeship. Additional training skills - Sous vide - Yakitori - Fermentation - Knowledge of food & industry

Reality check: We are based in Hay on Wye which has public transport throughout the daytime, own transport needed for evening service. - Work on a Saturday is expected (Sundays off).  You will be working in a busy kitchen which can be hot in the summer months

Qualifications required: GCSE Maths and English grade 2 and above or Functional Skills level 1 and above.  If you do not have GCSE grade 4 or above or Functional Skills Level 2 and above in either of these, then you will be entered in for a short training course including exam during your apprenticeship with us, this is a mandatory part of the apprenticeship training.

Qualification provided:  City and Guilds training as Production Chef Level 2. You will take a practical End Point Assessment exam at the end of your practical training. Once passed your will obtain your Producation Chef Level 2 Certificate from the Institute for Apprenticeships. More information about the qualification can be found on the link below.
